Ingredients

1-1/4 lb. ground lean turkey or chicken
1/2 tablespoon olive oil
2-1/2 cups (uncooked) rotini pasta
1 medium onion, chopped fine
2-3 cloves garlic, chopped fine
1 (10 oz.) box chopped frozen spinach
1 teaspoon oregano
1 (2.25 oz) can sliced black olives
1 (14.5 oz) can diced tomatoes
1 (8 oz.) can tomato sauce
small container crumbled feta cheese
Directions

Place frozen spinach in a small bowl and microwave until well thawed. Squeeze excess water from spinach.

Prepare pasta according to package directions

While pasta is cooking, in a large skillet, sauté turkey, onions and garlic in olive oil, breaking up turkey with a spatula as it browns

To the sautéed turkey, add diced tomatoes, tomato sauce, olives, spinach, oregano; mix well to combine. Add pasta to skillet and mix gently. Simmer for 3-4 minutes or until heated through.
